I'm not a very big fan of soda, it's way too sweet for me, but I am a big fan of my soda stream seltzer maker. The soda stream and other companies do offer pre-made syrups some with sugar and some sugar free that you can add to your homemade seltzer. When I got my soda stream years ago it came with a big packet of free samples that I was quite excited to try them and let me tell you, they were awful and disappointing. Ever since then I have tried my hand at a couple different homemade syrups with quite a bit of success.
I've been getting a few different frozen fruits in my winter CSA this year and decided I would make use of them in an untraditional way. My latest "syrup" was a blueberry one, I say "syrup" because this is not a traditional syrup which has loads of sugar in it.
Ingredients:
Combine all your ingredients in a pot and simmer for about 5 minutes, when all the blueberries have popped you're done. Take off the heat and cool. If you prefer your soda to have pieces of fruit in it you can stop here, if not strain them through mesh strainer. The leftover solids can be spread on toast which is delicious, otherwise discard.

- 1 lime or lemon (I used a lime)
- Tablespoon of honey, if you like a sweeter soda add more. Sugar can also be substituted.
- Splash of water

If you prefer your soda to have pieces of fruit in it you can stop here, if not strain them through mesh strainer. The leftover solids can be spread on toast which is delicious, otherwise discard.
Add three or four teaspoons into a glass, whatever your preference and slowly add your soda water, stir gently. Enjoy! this makes about 4-6 servers depending on how strong you like your flavoring to be.
